Grill's a no go. The apartment complex doesn't allow us to use a grill, except for the common ones that look like they've been caked in rust and birdshit. So I'm limited to oven/stove top cooking this time.

In that case:

throw it in a bag with lemon butter marinade, let soak for hour, toss in oven

Easy on the butter.

Or:

throw it in a bag with lemon butter marinade, let soak for hour, toss in skillet

Flat side up first, medium heat.
Flip once.
Serve.

Newman's Own Italian dressing with a dab of butter makes a great marinade. Soak for about 1 hour. Skillet or oven broiler works good. Makes it Mmmmm Mmmmm good

Lot of bagging going on in here.

Personally, you can't go wrong with lemon butter and herbs. I use a combination of parsley, thyme, and chives. Put fish in foil-tent foil, add lemon, butter and chopped herbs. Cook at 350 until fish flakes with a fork.

Add angel hair pasta tossed with olive oil and parmesan cheese.

Damn I'm hungry now!!! Mahi is my favorite fish. I so miss getting it fresh off the boat when I lived on Hatteras Island.

Mahi is so delicious. The texture and flavor are amazing. If it wasn't so damn expensive I'd eat it every other day (gotta have burgers the other days), but man do they ever rape you on the price of Mahi.

Outback has a little dipping sauce that they serve with their Mahi that I'd love to get the recipe to, if anyone happens to know it.
