He's not leaning off the bike or looking through the turn. But when I am braking for a downhill turn, I keep the brakes on lightly through the turn until I am ready to accelerate. This keeps the front end from popping up and upsetting the suspension and my line. Going uphill, I get in the right gear and finish my braking before I'm in the turn. As for level curves, I don't see many of those.

How do we know if he's even applying the brake? He might just be covering it.

I cover the brake a lot when I ride twisties, especially the gap. Never know when that semi will come around a corner in my lane or a hog will be on the road and I need to stand the bike up and brake quickly.

Dont worry the only time Ive been down so far was from still feathering the front brake while turning into my friends gravel driveway with her right behind me (on her bike).
